We were in Annecy in late January and all the restaurants that I researched before heading to this beautiful Alps town were closed. Apparently, many places close for some of the winter months or perhaps they were only open for dinner. We were just there for the daytime and didn’t stay for the evening so I’m not really sure. So for lunch we were on our own to find an inexpensive restaurant that served Savoyard cuisine. We found La Bigoudine Restaurant and ate fairly well for not too much money. We paid 40 euro for two people with salad, main dish, dessert, and a small bottle of wine. So it’s not a bad option for Annecy, which can be an expensive city to eat in. Here’s a video of our meal, which features traditional Savoyard food.

I did some research of hotels in Annecy, France on my trip a few weeks ago. I checked out a few hotels in person and took videos of two. Here’s one called Hotel des Alpes near the train station. It’s a good choice in you’re looking for a clean, comfortable and pretty hotel in a central location and at a budget price.

Annecy, France: An Overview

I spent a day in Annecy a few weeks ago after being commissioned by Trip Films.com to do a series of videos about Annecy. They gave me permission to show them on my blog. Here’s an overview video introducing you to Annecy. It’s the first of five; others will show good choices for accommodations and a local restaurant.

One of the things I like about Savoyard (Savoie) cuisine is it’s the French version of American ’comfort food.’  Cheeses, potatoes, creams….yum!  Here’s one of my favorites, Beaufort Souffle. This is SOOOO good!  Beaufort is my favorite cheese in the world, and lucky me, I live an hour from Beaufort country!

Here’s the Souffle recipe(conversions are not exact but will work for this recipe)

7 ounces of Beaufort cheese or 200 grams (or other sweet, rich semi-hard cheese if Beaufort is not available)

2 ounces of butter or 50 grams (plus butter for buttering souffle dish)

1/4 cup of flour      or 30 grams       (plus flour for souffle dish)

1 & 3/4 cups of milk           or 400 ml

4 eggs, separated

salt  pepper  nutmeg to taste

Preheat the oven to 375 degrees (or 7 in France). Butter and flour your souffle dish. In a large sautee or sauce pan over medium heat, dissolve the butter, gradually add the flour, and mix well. Slowly add the milk to make a smooth white sauce. Add the cheese and after it melts, take the pan off the heat. Separate your eggs and add your 4 egg yolks to the sauce. Add your salt, pepper, and nutmeg. Beat your egg whites with a mixer until they form peaks. Gently fold your egg whites into the sauce, taking care not to break the foamy whites too much. Pour into your souffle dish and place in the oven. Cook about 25 minutes, ensuring it doesnt get too brown on the top. Don’t open the oven while it’s cooking or it might fall!  Enjoy hot.
